Third annual limoncello post, part one

This year, I'm making herbal-infused limoncello.  However, I decided to infuse the herbs and the lemons separately in order to make mixing the flavors a little easier.  I took 1200 ml of 360 Vodka and the zest of 13 lemons and started soaking them in one large jar, and in three other smaller jars I put the rest of the 550 ml of Vodka and rose petals, lavender, and peppermint, one herb in each jar.  The next step will be to let it steep for at least 14 days and then follow the rest of the instructions from previous years.  Once the lemon zest and herbs are done infusing, I will taste them each to try to decide how much of the herbals to add and in what combinations.  At the moment, I'm thinking one variety of peppermint, one of lavender, and possibly one of lavender-rose, or perhaps just plain rose.  Should be fun!  Pictures etc. to follow once they're done infusing.

I'm definitely looking forward to it. I also need to pick up more of that elderflower liqueur.
